Cinnamon Orange Pecan Rolls with Antonella Tignanelli

1. Mix the warm milk with the yeast in a large bowl until fully diluted.

2. Add melted butter, sugar and eggs and mix. 

3. Add flour and salt and mix until you need to use your hands. 

4. Now start using your hands, if the dough sticks in the surface, add a bit more flour until it doesn't.

5. When the dough is formed, take out of bowl and place in a floured surface and knead for about 10 minutes until fluffy and homogenized.

6. Place back in the bowl with oil in the base, cover with plastic wrap and a warm towel and put in a warm place and let it rise for 1.5 hours or until it doubles her size.

7. Mix everything in a bowl until you have a paste.

8. Now you are gonna fold the dough into a square about 20×40 cm.

9. Paint said square with melted butter first and then place the filling all over, leaving about a finger empty at every edge.

10. Once ready, start folding from the smallest side of the rectangle. When you do this, don't press too hard, but make sure it's not loose either, treat the dough like a human.

11. Cut your rolls with a very sharp something (there should be 9 or 10) and place them in an oven tray with parchment paper and butter.

12. Cover them in foil and take them to the same warm place they grew before, this time leave them for 30 min.

13. Cook them in a preheated oven at 170 degrees Celsius for about 25 minutes.

14. Mix this well with a small whisk until smooth and as you take the rolls out of the oven, cover with the frosting.
